Ingredients used in Chocolate sandwiches
• All-purpose flour (maida) - 1.25 cups.
• Egg - 1 number.
• Vanilla extract - 2 teaspoons.
• Cocoa powder - half cup.
• Baking soda - 3/4 tea spoon.
• Butter (softened) - 3/4 cup.
• Milk - 2 tablespoons.
• Sugar - 1 cup.
• Salt - 1/4 tea spoon.
• Confectioner's sugar - 2.5 cups.
• Food coloring (red & green) - as required.
Method:
  • Beat cream, butter, sugar, egg and vanilla until fluffy.
  • In anotherbowl combine flour, cocoa powder, baking soda and salt. Add to creamed mixture.
  • Shape dough into two 1.5thick rolls. Wrap in waxed paper. Chill for several hours.
  • Place slices on ungreased cookie sheet. Decorate by drawing the tines of a fork across each slice. Bake at 375 F for 8-10 min. or until almost firm.
  • Meanwhile combine filling ingredients except food coloring . Beat until spreading consistency.
  • If desired divide filling half- half red and green. Add appropriate extract to each one.
  • Cool cookies then spread wrong side of cookie and top with second cookie.
