Ingredients used in Cauliflower Pickle
• Cauliflower florets - 1 cup.
• Mustard seeds - 1 tea spoon.
• Ginger (finely chopped) - 1 tea spoon.
• Fenugreek seeds - 1/2 tea spoon.
• Fennel seeds - 1 tea spoon.
• Crystal salt - to taste.
• Peanut oil - 4 tablespoons.
• Curry leaves - 2 springs.
• Yellow mustard seeds - 1 tea spoon.
• Turmeric powder - 1 tea spoon.
• Hing - pinch.
• Vinegar - 1 tea spoon.
• Lemon juice - 1 tablespoon.
• Green chilies (chopped) - 1 number.
• Water - as required.
• Red chili powder - 2 teaspoons.
Method:
  1. Boil water in a pan, add the florets of cauliflower, season with crystal salt, cook for not more than a minute, strainthe florets, dry them ona muslin cloth and keep aside.
  2. Dry roast mustard seeds, fenugreek seeds, fennel seeds, grind it to a fine powder and keep aside.
  3. Heat peanut oil (or sesame oil of your choice) in a pan, add finely chopped ginger, curry leaves, yellow mustard seeds, turmeric powder, hing, saute it for about a minute and turn off the flame.
  4. Take a mixing bowl, add vinegar, lemon juice, crystal salt, chopped green chilies, cauliflower florets, red chili powder, prepared masala powder, mix well, transfer the preparedtempering and give it a mix.

Delicious Cauliflower pickle is now ready to serve.
