BHENDI SAMBAR FRIED RICE

Ingredients used in BHENDI SAMBAR FRIED RICE
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Peanuts - 1 tablespoon.
• Chana dal - 1 tablespoon.
• Dry red chillies - 4 numbers.
• Urad dal - 1 tea spoon.
• Bhendi/lady's finger (cut to small roundels) - 1/2 cup.
• Salt - to taste.
• Curry leaves - 4 springs.
• Garlic (chopped) - 4 numbers.
• Ginger (chopped) - small.
• Sambar powder - 2 tablespoons.
• Onion (chopped) - 1 number.
• Green chillies (chopped) - 4 number.
• Tomato (chopped) - 1 number.
• Rice (boiled) - 1 cup.
Method:
  • Take a pan, add oil, mustard seeds, cumin seeds.
  • When they splutter, add peanuts, chana dal, and dry red chilies. Saute all these for few mins.
  • Add urad dal, chopped lady's finger, saute it again for 4 to 5 minutes.
  • Now even add salt as per taste and mix it well.
  • Add curry leaves, chopped garlic,chopped ginger and mix it well. Saute all for 1 to 2 mins.
  • Add sambar powder, chopped onion, chopped green chilies, mix well.
  • In the same pan, even add chopped tomato, salt as per taste.
  • At last, add cooked rice to the same pan, toss well.

Serve it hot.
