Okra & Eggs Cooked In Sour Curry

Ingredients used in Okra & Eggs Cooked In Sour Curry
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Dry red chili - 3 number.
• Cumin seeds - 1 tea spoon.
• Onion (chopped) - 1 number.
• Curry leaves - 3 springs.
• Salt - to taste.
• Ginger garlic paste - 1 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Hing - 1/2 tea spoon.
• Okra(lady’s fingers) - 15 number.
• Coconut powder - 1 tablespoon.
• Roasted chana powder - 1 tablespoon.
• Tamarind pulp - 1 cup.
• Water - as required.
• Red chili powder - 1 tablespoon.
• Eggs (boiled) - 5 number.
Method:
  • Heat oil in a pan, add mustard seeds when they splutter add dry red chilies, cumin seeds, chopped onions, curry leaves, salt,ginger garlic paste, turmeric powder and saute well.
  • Now add hing,chopped okra(ladies fingers) and cook it.
  • Add coconut powder, roasted chana powder, tamarind pulp, the required amount of water, red chili powder, give it a mix, cook it with closed lid, then add boiled eggs, chopped coriander leaves and cook for another 2 to 3 minutes.

Delicious Okra & Eggs Cooked In Sour Curry is now ready to serve with hot rice.
