Ingredients used in Beef with Mandarin
• Rib eye steak - 350 grams.
• Dried mandarin or tangerine peel (chopped) - 2 teaspoons.
• Dry sherry - 2 teaspoons.
• Beef stock - 1/3 cup.
• Sesame oil - 1 tea spoon.
• Peanut oil - 1 tablespoon.
• White pepper powder - 1/4 tea spoon.
• Soy sauce - 2 cups.
• Ginger (chopped) - 1 tablespoon.
• Caster sugar - 1.5 teaspoons.
• Corn flour - 1.5 teaspoons.
Method:
  • In a bowl, add beef, soy sauce, sherry, ginger sesame oil together; mixthrough the meat to coat it. Set aside for 15 minutes.
  • In a pan heat the peanut oil, swirling gently to coat the base and sides.
  • Add the beef and stir-fry over high heat for 2 minutes, until meat changes color.
  • Then add pepper, peel, extra 1 tsp soy sauce and sugar; stir-fry briefly.
  • Add the cornflour in the stockand dissolve properly.
  • Add the cornflour mixture to the pan and stir until the sauce boils and thickens.

Serve with steamed rice.
