Ingredients used in Aloo Baingan
• Potatoes big size - 2 numbers.
• Small brinjal - 4 numbers.
• Fenugreek seeds (methi dana) - 1/4 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Salt - to taste.
• Coriander powder - 1/4 tea spoon.
• Mustard seeds - 1/4 tea spoon.
• Cumin seeds (jeera) - 1/4 tea spoon.
• Green chillies - 2 numbers.
• Red pepper - 1/4 tea spoon.
• Onions sliced (small) - 2 numbers.
• Oil (canola or olive or desi ghee) - 1/2 tablespoon.
• Hing - 1 pinch.
• Tomato chopped - 1 number.
Method:
  • Take Pressure cooker and add oil , once it is heated add hing, methi daana, zeera, mustard seed.
  • Once they start to pop up, add onions and fry them till they turn light brown, then add grated tomatoes and fry it till oil separates.
  • Add green chilies, potatoes and fry it for 2 minutes.
  • Now add haldi, dhania, red pepper, chopped small brinjals and mix it well.
  • Add salt along with 3/4 cup of water and close the lid of cooker.
  • Cook for 2 whistles and let it cook in its own steam for 5-7 minutes. Open the lid, when no steam left.

Serve it with phulkas /parathas.
