Akoori - Parsi Style Eggs

Ingredients used in Akoori - Parsi Style Eggs
• Vegetable oil - 2 teaspoons.
• Onions (finely chopped) - 2 springs.
• Garlic cloves (crushed ) - 2 numbers.
• Ginger root (roughly chopped) - 1+1/2 numbers.
• Serrano green chilies - 2 numbers.
• Small red tomato - 1 numbers.
• Cumin seeds (roasted) - 1/2 teaspoons.
• Eggs, - 4 numbers.
• Cream - 2 teaspoons.
• Table salt - to taste.
Method:
  • In a medium skillet, heat the oil over medium heat. When hot enough add the spring onions and saute until transparent.
  • To it, add the cloves and ginger, saute for another thirty seconds.
  • Then put the green chilies, tomatoes and cumin seeds. Saute for another 3 minutes.
  • Add the eggs and cook, stirring constantly.
  • At last, add the cream. Continue cooking, stirring constantly, until the eggs are cooked to your liking. Sprinkle salt to taste.

Serve immediately
