Sattu Dalia is a popular and special healthy and nutritious drink made from a variety of  flours which includes corn, gram, millet, wheat, barley, soya bean, oat, dry fruits, milk and sugar making it a good source of natural fiber, proteins and carbohydrates. Sattu dalia is refreshing and soothing Indian beverage, contains no artificial color or chemicals and is one of the best nourishing drink for the whole family.

It gives energy and is easy to digest. Sattu dalia is made in many ways. It is also said to be the most running and traditional drink of bhojpuries in summers. Sattu (powder or flour of roasted gram) is a mixture of different whole wheats and used very commonly to prepare various dishes and snacks in most of the homes throughout India. Dishes made from sattu are highly nutritious and suitable for to be eaten by all age groups.

Sattu is also considered nutritious for growing children. Sattu dalia is delicious to taste, easy to make and a highly proteinous multipurpose balanced dish. Sattu dalia is widely available and used in northern India. Sattu is also known as Chhatua which is a ground powder of pulses and cereals that are roasted mixed, milk sweetened with sugar.

The various cereals and pulses that go into preparing this delicious, yummy and highly healthy and nutritious powder are horse gram, green gram, jowar, wheat, oats, barley, pigeon pea, green peas etc. Normally sattu dalia is sweet but you can also make a savory dish with green chili, lemon juice and little salt that can be made with sattu. Dalia is the Indian name of cracked or broken whole wheat.

In North India, dalia is generally used to make porridge which tastes delicious and nutty. This makes an excellent super meal for breakfast, lunch or dinner. It is rich in protein and fiber and contains manganese, phosphorus, magnesium and selenium in very large quantities. It is also rich in Zinc, Copper, Iron and Potassium. However, Calcium is also present in small amounts; it is rich in Vitamin B6, Niacin, Thiamin, Folate, Riboflavin and Pantothenic Acid. Vitamin E and Vitamin K are also present in small but considerable amounts.

Barley is a cereal grain used extensively in soups and stews. It is derived from the grass called Hordeum vulgare.. Barley makes a nutritious food with several health benefits to its credit. It has a rich nutty flavor and pasta-like consistency. Barley is a very good source of fiber and selenium. It also serves as a good source of the minerals phosphorus, copper and manganese.

For preparing Sattu, firstly clean and dry all the grains in mild sunlight. After drying, roast all grains separately and grind them to fine powder or flour. Preserve this flour in an air tight jar. The Sattu is ready. To prepare the Sattu Dalia, mix 2 tablespoon of Sattu powder in cold milk or water and make a thick batter like liquid. Add sugar or honey according to your taste and mix well.

Garnish with your favorite nuts like walnuts, cashew nuts, almonds etc or you can also add small pieces of fruits like banana, apple, mangoes etc. The Sattu Dalia is ready to be served. Serve cold in a bowl. Sattu can be made in delicious variations. Sattu is said to be originated from the eastern states of India such as Jharkhand, Bihar and Orissa, where is it used as a popular breakfast dish. Originally the Sattu recipe is prepared by using the powder made from seven cereals, pulses and millets. All the seven grains were used in equal proportions and these included maize, barley, horse gram, pigeon pea, green peas, khesari, and kurthi, which is a rare pulse.

Because of the combination of seven different cereals and pulses, the powder was known as ‘saat anjaa’. However, over time this name changed to Sattu. Other popular dish which can be made from the sattu powder is the Sattu paratha which is a stuffed paratha with a filling of fried chickpea flour and mashed potatoes. The powder is also used for making snacks and a nice sugar sweetened dish is also prepared with Sattu.

Sattu is offered by the husband to his wife on ‘Badi Teej”, an Indian festival when the wife fasts during the day even without taking in a sip of water. She takes the first bite of the sweet at moon rise, which is followed by fruits and sweetened milk. Flour or atta is mainly produced by finely grinding grains, which are mostly a good source of carbohydrates.

Often different flours such as that of nuts, tubers, seeds and legumes are also used and mixed with grain flours to increase the nutritive value of the flour. Such add on flours are rich in proteins, vitamins and calcium and make your child’s roti or paratha nutritious and healthy. Overall Sattu Dalia is a rich source of proteins, fiber and vitamins, easily digestible and fat free. Sattu is good for diabetic people, is a natural coolant and keep the body temperature cool, a natural source of energy and helps in weight management.
