Ingredients used in Nile River Lentil Soup
• Red lentils - 1 cup.
• Onion - 1 number.
• Garlic - 1 clove.
• Tomato - half cup.
• Ginger powder - to taste.
• Cumin powder - 1 tea spoon.
• Coriander powder - to taste.
• Water or vegetable stock - 4 cups.
• Lemon - 2 slice.
• Coriander leaves - to taste.
• Cayenne - to taste.
• Black pepper powder - to taste.
• Salt - to taste.
• Olive oil - to taste.
Method:
  • Heat oil in heavy pot on medium high heat. Saute onion and garlic until softened.
  • Then add soaked lentils, ginger powder, cumin powder coriander powder andmix well.
  • Add lemon slices, stock, tomatoes, cayenne, salt and pepper. Bring to boil, reduce heat to low, cover pot and simmer for about 45 minutes or until lentils are tender.
  • If you like your soup thin, add more stock.
  • Take the pot off the burner, discard lemon slices, and puree soup in blender or food processor.
  • Garnish with chopped coriander leaves.
  • Alternatively, you can add the cilantro before you put the soup in the food processor.
