Ingredients used in Mutton Shahjahani
• Mutton - 500 grams.
• Onions - 2 numbers.
• Garlic - 6 cloves.
• Ginger - 1 piece.
• Poppy seeds - 1 tea spoon.
• Coriander leaves - 1 bunch.
• Cinnamon - 1 piece.
• Cloves - 3 numbers.
• Cardamoms - 2 numbers.
• Asafoetida - 1 tea spoon.
• Red chillies - 5 numbers.
• Oil - as required.
• Salt - to taste.
• Water - as required.
Method:
  • Clean and cut meat into 2.5 cm cubes.
  • Grind the spices to a smooth paste.
  • In a pan add oil, Slice onions and fry till brown.
  • Add ground spices and fry.
  • When oilstarting oozing out, add mutton fry for about 20 minutes. Add stock or water and salt.
  • Reduce temperature and simmer till meat is tender.
  • Remove on to a dish.
  • Garnish with silvers of almond and silver paper.
