Mix Veg Adai is a South Indian speciality popularly prepared in Tamil Nadu and Kerala for its high nutritive values and a brilliant healthy breakfast snack. This Adai is made with a mix of four nutritious lentils, spiced with red chillies, fresh peppercorns and flavoured with curry leaves. Mix vegetable Adai is a fantastic and delectable crepe having the good of yummy vegetables topped on the Adai and served with chutney. It is quite a heavy dish and one cannot eat more than 2 or 3 crepes at one time. Often in the Adai batter, ginger, hing or methi seeds are added which aids in proper digestion.
Moreover ginger also gives a warmth and spicy flavour to the adai. Adai is a little thicker than the normal basic dosa. Adai is a high protein dish and can also be eaten with milaga podi and ghee. Adai’s origin is from Tamil Nadu and is paired with a yummy vegetable curry called the Avial. The batter for Adai is ground coarsely than the regular dosa batter and this batter does not require any fermentation. The Adais are prepared slightly thicker than the normal dosa and they consume a little more oil as the batter is ground coarse.
Adai can also be eaten by itself without any accompaniment as the batter is spicy or serve with coconut chutney. Or else it can also be eaten with a bit of ghee and jaggery. Curry leaves is the main flavouring ingredient added in this Adai idli. It gives a refreshing aroma and flavour to the pancake. Curry leaves are vital ingredient in most Indian curries especially south India. They also add exotic taste in additional to the enormous medicinal values it has. Curry leaves improve functioning of the stomach and small intestine and promote their action. They improve the quality of digestive juices secreted during digestion.

In a bowl put in the rice, channa dal, toor dal, dry red chillies and curry leaves. Add water, wash the ingredients well. To this add in the urad dal, yellow moong dal, masoor dal, pour water, wash nicely once and drain off the water. Put in the hing, salt and water till all the lentils are soaked properly and rest aside for at least for 3-4 hrs.
Drain the water and grind them in a blender to a coarse paste. Take a flat non stick pan and pour 1 spatula batter in the pan and spread evenly from inside out. Sprinkle some finely chopped veggies like carrots, french beans, corn, spinach and green chillies etc.
Drizzle some oil at the edges of the adai and to the center. Cook it on medium flame. Slightly press down the veggies into the soft batter so that they stick ino the batter. Brown it on one side and then flip over to the other side for a minute.
Fold and serve hot with coconut chutney or pickle. As Adai is a multi lentil crepe, it is crispy and a stomach filling breakfast. It tastes very good all by itself but can also have accompanied with avail which gives a heavenly and pleasant taste.
For preparing this extremely healthy and nutritious adai recipe, do not use any sort of yeast or baking powder to ferment the batter or else the batter will lose its natural taste.
