• Chilli,turmeric and ginger garlic paste - 1 tsp to taste.
Method:
peel karela cut into thin round slices,remove seeds add them to salt ,mix them properly and soak them in salt for 10-15 mins.After 15 mins take a pan add oil (this receipe requires a little more oil then regular curries) squeeze the water from karela and add them to the oil in the pan,let the karela get cooked till they turn light brown color and add the sugar, let them fry on slow flame so that they don#39;t get burned.In the mean time fry groundnuts,till,onions(in oil) separatly and grind them together with coriander powder,chilli powder,turmeric powder,garam masala, ginger garlic paste,coconut powder,and finally add tamarind paste let all grind together for few more seconds.Add this entire mixture to the frying karela and cook it till the oil oozes out from the gravy,add some water if needed ,normally tamarind paste water should be enough.
