Ingredients used in EGGPLANT SANDWICH
• Eggplant - 50 grams.
• Butter - 1 tablespoon.
• Green peas - 50 grams.
• Pepper powder - ½ tea spoon.
• Potato (boiled) - 100 grams.
• Salt - to taste.
• Cheese - 3 tablespoons.
• Bread - 6 slice.
• Carrot (grated) - ½ piece.
• Green chilli (chopped) - 2 numbers.
Method:
Cut the eggplant into small pieces and put it into the salt water. Heat pan and add butter, eggplant pieces, green peas, salt, grated carrot, chopped green chili, pepper powder, saute it for 2 to 3 minutes till eggplant is slightly cooked. Add boiled potatoes mix it well, then add grated cheese, mix it and switch off the flame. Spread the eggplant mixture evenly among bread slices, put one piece of bread on top of the other to make a sandwich.
