EGGPLANT PUNUGULU

Ingredients used in EGGPLANT PUNUGULU
• Eggplant(big) chopped - 1 cup.
• Onions(chopped) - 1 number.
• Carom seeds(ajwain) - 1/2 tea spoon.
• Turmeric powder - pinch.
• Coriander powder - 1/2 tea spoon.
• Ginger garlic paste - 1/2 tea spoon.
• Red chili powder - 1 tea spoon.
• Salt - to taste.
• Maize flour - 1 cup.
• Soda - 1 pinch.
• Oil - to fry.
• Water - as required.
Method:
  • Cut eggplant into small pieces and add onions, carom seeds(ajwain), turmeric, coriander powder, ginger garlic paste, red chili powder, salt, corn flour, soda, water and mix it to make the thick and loose batter.
  • Now drop into small dumplings in hot oil and deep fry them till they become a golden color, take them out on tissue paper.
