Ingredients used in DHABA STYLE MIX VEG CHUTNEY
• Mustard oil - (1-2) tablespoons.
• Cumin seeds - 1/4 tea spoon.
• Kalonji / onion seeds - 1/4 tea spoon.
• Green chilies - 5 numbers.
• Raw mango - 1 number.
• Carrot - (1-2) numbers.
• Mustard powder - 1 tea spoon.
• Red chilli powder - 1-1/2 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Dry red chilies (break into 2 halves) - 2-3 numbers.
• Lemon pieces(soaked in salt water) - 4-6 numbers.
• Lime juice - 1/2 cup.
• Fennel seeds - 1/2 tea spoon.
• Coriander seeds - 1/2 tea spoon.
• Salt - to taste.
• Vinegar - 1 tablespoon.
Method:
In a glass, add lemon slices, salt, lime juice and keep aside. Heat mustard oil in a pan then add cumin seeds, kalonji, saute it and allow it rest. Cut slices of carrot, raw mango into lengths and keep aside. Take a bowl, add green chilies, raw mango, carrot, little salt, mustard powder, red chili powder, turmeric powder, dry red chilies, lemon piece along with soaked juice (as required). Crush fennel seeds, coriander seeds with pestle, later transfer it to the above bowl and mix it. To it add vinegar, above prepared tempering and mix it. Finally keep aside for 3-4 days to absorb juices. Dhaba style mix veg chutney is now ready to serve.
