Crispy corn pepper cashew is an excellent dish which can be served as a snack especially a wonderful and exotic cocktail snack. This snack dish is neatly made with sweet corns and cashew nuts that are coated with a humble spiced batter, deep fried until lightly crisp and tempered with fresh curry leaves and green chillies to give a zest to the dish.
1. Take a bowl and add ginger garlic paste, salt, ½ tsp pepper powder, 1tbs corn flour, 1 tbs egg, little water and mix thoroughly.
2. Add corn and mix well and keep aside.
3. Take another bowl and add corn flour, all purpose flour and mix thoroughly and add only corn from the mixture and dust it.
4. Then place in the colander to remove extra flour as shown in the video.
5. In the left over batter add cashew nut and mix thoroughly.
6. Remove the cashew nuts and dust it in the cornflour and all purpose flour mixture.
7. Heat oil in a pan and add corn and place the lid but do not cover completely deep fry corn and remove into a plate.
8. In the same oil add cashew nut and deep fry them and take it into a same plate.
9. Take 2 tbs oil in a pan add onion, crushed ginger and garlic, curry leaves, green chillies, soya sauce,1 tsp finely chopped curry leaves,½ tsp pepper and saute it.
10. Add corn and cashew nut and toss it.
11. Now the crispy corn pepper cashew nut is ready to serve.

To prepare this yummy snack, firstly take a bowl, add pepper powder, salt, corn flour, little egg (optional) and mix well. Add sweet corn and mix well and remove. In the balance batter, add the cashew nuts and mix well. In another bowl, combine corn flour and maida together. In this mixture, add the coated corn kernels and coat them well with the flour and strain the excess flour through a colander and keep aside.
Repeat the same with the coated cashew nuts. Heat oil in a pan and deep fry the corn and once done remove and then add the cashew nuts and fry until crisp. Remove and keep aside. In another pan, heat some oil and add onions, crushed ginger garlic, slit green chillies, fresh curry leaves, finely chopped coriander leaves, salt, little soya sauce, mix well and then add the fried sweet corns and cashew nuts and toss well. Serve hot.
