CHINESE CHICKEN WITH CASHEW NUTS

Ingredients used in CHINESE CHICKEN WITH CASHEW NUTS
• Red chilli chopped - 3 numbers.
• Spring onions into 2inc pieces - 6 bunch.
• Roasted cashew nuts - 1 cup.
• Oil - as required.
• Dried egg noodles - 225 grams.
• Soya sauce - 4 tablespoons.
• Garlic cloves crushed - 3 cloves.
• Chicken bone less skinned and sliced into strips - 175 grams.
• Salt - to taste.
• Black pepper - 1 tablespoon.
• Cornflour - 2 tablespoons.
• Chicken stock - 2 tablespoons.
Method:
  • Place chicken in a bowl with the garlic, soya sauce and corn flour and mix well coated. cover and chill for 30 minutes.
  • Mean while , bring pan of water to the boil and add noodles turn off heat and leave to stand for 5 minutesdrain well.
  • Heat the oil in large pan add chicken and marinade juices. stir fry on a high flame for 4-5 minutes, or until golden brown.
  • Add the cashews and spring onions to pan and some chicken stoke if drying and stir fry for 5 minutes.
  • Add the drained noodles some soy sauce and black pepper and fry for more 5 minutestoss the noodels well and serve immediately garnish with spring onions and chooped chilli.
