Ingredients used in Chicken Rasam
• Garlic cloves - 8 numbers.
• Salt - to taste.
• Tomato (chopped) - 2 numbers.
• Onion (chopped) - 1 number.
• Curry leaves - 2 springs.
• Coriander stems - 1 bunch.
• Ginger slices (1inch) - 4 pieces.
• Green chilies - 4 numbers.
• Chicken boneless - 150 grams.
• Chicken bones - 300 grams.
• Cumin seeds - 1 tea spoon.
• Pepper corns - 1 tea spoon.
• Corn starch - 1 tablespoon.
• Egg - 1/2 number.
• Oil - 1 tablespoon.
• Red chilies - 2 numbers.
• Turmeric powder - 1/4 tea spoon.
• Coriander leaves(chopped) - 1 tablespoon.
• Water - 5 cups.
Method:
  • Heat water in a pan, add chicken bones, slitted green chilies, ginger slices, coriander stems and curry leaves stems and let it cook for about 30 minutes on a slow flame.
  • Then strain out this water in a pan, add chopped onions, chopped tomatoes, salt, let it boil for 15 minutes till tomatoes and onions are cooked.
  • Take mortar pestle in this, add garlic, pepper, cumin seeds, crush it and make a coarse powder, keep it aside.
  • Take a bowl, add boneless chicken small pieces, add salt, cornstarch, beaten egg mixture, mix it well and take this chicken pieces, add it to the boiling soup.
  • Once chicken pieces are cooked, float on top then add earlier crushed pepper and garlic powder, mix it.
  • For the tempering, heat oil in a pan add red chilies, turmeric powder, curry leaves, chopped coriander leaves, saute it.
  • Pour this tempering into the chicken rasam, switch off the flame.

Serve this with rice.
