When we prepare puran poli it may happen that the sweet stuff (that is puran used to stuff in puran poli) gets wasted or left out. This recipe uses the same stuff to prepare a delicious Amti, a maharastrian recipe.

This is based on the left over puran (as in for puran poli) and in one of the innovative recipe. Also it taste is sweet and sour.

Ingredients used in Amti from Leftover puran (stuff used in puran poli)
• Left over puran - 1 cup.
• Water - as required.
• Toor dal - half cup.
• Tamarind extract (lemon size) - half cup.
• Curry leaves - 4 spring.
• Coriander leaves - 2 tablespoons.
• Cumin seeds - 1 tea spoon.
• Hing (asafoetida) - 1 tea spoon.
• Goda masala - 4 tablespoons.
• Turmeric powder - 1/4 tea spoon.
• Red chilly powder - 2 tablespoons.
• Green chillies - 2 numbers.
• Oil or ghee - as required.
• Mustard seed - 1 tea spoon.
• Salt - to.
Method:
  • Take a pressure cooker, add toor dal with some salt and water. And pressure cook it and keep aside.
  • In a pan, add the ghee, after it gets heat up, add the cumin seed, mustard seeds, and when it crackles, add the red chilies, curry leaves, hing .
  • In a bowl take the puran, add water about a halfcup and mix well in such a way that all the puran should get diluted in it.
  • Add the tamarind extract. Add the goda masala, red chilipowder, turmeric powder and mix well.
  • Pour this mixture to the pan and mix well. Add the required amount of salt. Cook it for 10 minutes.
  • To it add the dal which we have already cooked. and mix well. Garinsh it with coriander leaves.
