Ingredients used in Aloo Kura
• Potatoes - 250 grams.
• Mustard seeds - 1/2 tea spoon.
• Black gram - 1 tea spoon.
• Bengal gram - 1 tea spoon.
• Chopped coriander leaves - 1 cup.
• Chopped curry leaves - 5 numbers.
• Green chilies - 3 numbers.
• Ginger - 2 numbers.
• Onion - 1 number.
• Asafoetida - 1 tea spoon.
• Curry leaves - 2 springs.
• Spring onion - 1 cup.
• Salt - to taste.
• Water - as required.
• Oil - as required.
Method:
  • Wash potatoes and cut them into cubes.
  • Boil them for about 7-8 mins and allow it to cool. Next, peel them off and keep them aside.
  • Chopped onions, ginger, green chilies finely and keep them aside too.
  • Heat oil in a vessel, put all the ingredients for seasoning and fry them for 3-4 minutes.
  • Add chopped onions, ginger, green chilies and fry for another 3-4 minutes.
  • Then, add peeled aloo along with salt and mix it well.
  • Put chopped curry leaves and coriander leaves.
  • At last, garnish with chopped spring onion.

Yummy Aloo Kura is ready to serve.
