Ingredients used in Maharashtrian Chicken Rassa
• Roughly chopped cilantro (coriander) - 5 springs.
• Large onion sliced - 1 numbers.
• Ginger minced - 1 teaspoons.
• Garlic minced - 1 teaspoons.
• Whole garam masala - 1 cardamom, 2 cloves,2 cinamon sticks, 3 peppercorns - 8 numbers.
• Sesame seeds - 1 teaspoons.
• Grated dry coconut - 3 teaspoons.
• Medium size onion chopped - 1 numbers.
• Bay leaves - 2 leaf.
• Oil - 3 teaspoons.
• Salt - 1 to taste.
• Chilli powder - 1 teaspoons.
• Turmeric powder - 1/4 teaspoons.
• Chicken - 1 lbs.
• Ginger garlic paste - 1 teaspoons.
• Tomato chopped - 1 numbers.
• Coriander powder - 1 teaspoons.
• Cumin powder - 1 teaspoons.
• Red chilli powder (use more if u want more spicy) - 1.5 teaspoons.
Method:
Step 1 : Marinate Chicken 1.1) Wash and clean chicken. Make big pieces. 1.2) Mix ginger-garlic paste, turmeric powder, chilli powder, salt and marinate chicken for 1 hour. If you are in a hurry, you can marinate for 15 minutes. Step 2 : Saute Chicken 2.1) Heat 2 tsp Oil in kadhai. 2.2) Add bay leaves. Fry till you smell nice aroma. 2.3) Add finely chopped onion. Fry till onion is pink. 2.4) Add marinated chicken. Fry for a minute on medium heat. 2.5) Cover and cook on low heat for 10 minutes. Step 3 : Prepare chicken masala 3.1) Dry roast grated dry coconut. Keep it aside. 3.2) Dry roast sesame seeds. Keep them aside. 3.3) Heat remaining 1 tsp Oil. 3.4) Add whole garam masala. Fry for 30 sec. 3.5) Add chopped Garlic and Ginger. Fry for a minute. 3.6) Add sliced onions. Fry till brown. 3.7) Add coriander. Fry for another minute. 3.8) In a blender, blend together dry roasted coconut, roasted sesame seeds, our onion-ginger-garlic-coriander-garam masala mixture, tomato, coriander powder, cumin powder, red chilli powder. This is our chicken masala. Step 4 : Adding masala to chicken 4.1) Add the chicken masala we prepared to the chicken in the kadhai. 4.2) Fry for 2 minutes on medium flame until oil oozes out. 4.3) Add water as per desired consistency. 4.4) Add salt to taste. 4,5) Cover and cook on low flame for 15 minutes. Awesome chicken rassa is ready. Enjoy it with rice, roti or naan.

This is a great recipe for preparing Maharashtrian style chicken. We followed it step by step and it turned out really good. You might want to add poppy seeds and coriander leaves to add a nice flavor. But apart from that it is perfect.

This recipe is not very Maharashtrian -- use special Maharashtrian kala or goda masala for an authentic recipe.
