Ingredients used in Deep Fried Fish
• Fresh whiting/snapper/sea bass - 500 grams.
• Garlic (chopped finely) - 8 cloves.
• Coriander/cilantro roots or stems (chopped finely) - 10 numbers.
• Turmeric powder - 1 tea spoon.
• Fresh pepper (ground) - to taste.
• Salt - to taste.
• Soya sauce - 1 tea spoon.
• Kaffir lime leaves(fresh or dried) - 5 leaf.
• Soya or vegetable oil - 2 cup.
Method:
Place the whole fish or fish pieces in a bowl with the salt, pepper, garlic, turmericpowder, soya sauce, and coriander. Mix well, cover and marinate in the refrigerator for 2-4 hours. Heat the oil in a large pan or a wok, add the kaffir lime leaves and deep fry until crispy. Later, remove from the pan and let drain. Put the fish in the oil over medium to high heat and deep fryuntil golden brown. Remove the fish from the oil, drain, and place on a plate. At last, garnish with the fried kaffir lime leaves.
