Ingredients used in Curry Leaf Powder
• Curry leaves - 1 spring.
• Garlic(optional) - 4 cloves.
• Tamarind - 1 tablespoon.
• Green chilies (chopped) - 4-5 number.
• Pepper corns - 1 tea spoon.
• Methi seeds - half tea spoon.
• Mustard seeds - 1 tea spoon.
• Chana dal - half cup.
• Oil - as required.
• Salt - to taste.
• Cumin seeds - half tea spoon.
Method:
  • In a pan add oil mustard seeds, methi seeds, cumin seeds mix them.
  • Add chana dal, peppercorns, tamarind cook all of them on low heat.
  • As chana dal gets the color, add green chillies, garlic. Cook till chillies become dry.
  • Once green chillies starts drying, add curry leaves hing powder. Cook on a low flame till curry leaves dry out.
  • Add a pinch of salt allow the mixture to cool down.
  • Blend the mixture add salt to the powder if required.

the first one is chana dal as we north indians call it. It is split chick peas ( or does it go by another name ?). Go to any store which has indian spices and buy "Chana Daal". If you dry grind it into powder you would get "Besan"
