Ingredients used in Vangi bhath
• Brinjals - 4-5 numbers.
• Tamarind juice - 1 cup.
• Rice(cooked) - 3 cup.
• Oil - 1 tablespoon.
• Mustard seeds - 1 tea spoon.
• Cumin seeds/zeera - 1 tea spoon.
• Chana dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Curry leaves - 3-4 leaf.
• Salt - to taste.
• Vangi bhath powder - 2 tablespoons.
• Peanuts - 1 tablespoon.
Method:
  • Take a pan, add oil to it. Once hot enough, add mustard seed and cumin in it once they start spluttering.
  • Then add chana dal, urad dal, and peanuts fry till golden brown.
  • To it even add curry leaves and brinjal pieces in it and fry till they become soft and change color.
  • Add tamarind juice in it to this along with additional salt, vangi bhath powder and red chilly powder( if you want it to be spicy). Keep mixing it until it becomes thick.
  • Once done add cooked rice to it. Switch off the gas and let it stay for some time.
