Ingredients used in Snake Gourd Roasted Chana Rasam
• Tomatoes (slices) - 2 numbers.
• Garlic cloves - 7 number.
• Snake gourd (roundels) - 1 cup.
• Mustard oil - tea spoon.
• Mustard seeds - 1 tea spoon.
• Tamarind juice - 1 cup.
• Water - as required.
• Sugar - pinch.
• Coriander leaves (chopped) - 1 number.
• Dry red chilies - 2 number.
• Cumin seeds - 1 tea spoon.
• Onion (chopped) - 1 number.
• Curry leaves - 2 spring.
• Turmeric powder - 1/2 tea spoon.
• Hing - 1 tea spoon.
• Green chilies (chopped) - 2 number.
• Red chili powder - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Salt - to taste.
Method:
  • Grind fine paste of tomatoes slices, garlic cloves.
  • Now fry chopped snake gourd roundels in mustard oil. Keep aside.
  • In the same oil, add mustard seeds, dry red chilies, cumin seeds, chopped onion, curry leaves, turmeric powder. hing, green chilies, earlier ground tomato puree, saute till raw flavors are gone.
  • Season it with red chili powder, coriander powder, cumin powder, salt, tamarind juice, boil it.
  • For thickening, add roasted chana dal powder along with water and let this boil for few more minutes.
  • After few minutes of cooking, sprinkle a pinch of sugar, fried snake gourd roundels, boil it.
  • When finally it gets to desired consistency, garnish with chopped coriander leaves and serve it with rice.
