Ingredients used in Ridge Guard sabji (maharashtrian style)
• Green chillies - 4-5 small.
• Onion - 1 large.
• Ridge guard or turai - 2 stricks.
• Oil - 2 tablespoons.
• Salt - 1 to taste.
• Turmeric - 1 teaspoons.
Method:
Scrub off skin of 2 long ridge guards and chop them finely. Heat oil in a pan, add chopped onions, salt, green chillies and jeera. Once onions get slightly transparent, add 1 tspn turmeric and fry for 2 min. Then add chopped ridge guard. Mix well , add little bit of sugar and garam masala ( both optional) and cook on a medium-low flame covered for about 10-15 min with occasional stirring. It will leave water as it cooks and it will leave oil that#39;s when you#39;ll know it#39;s done. Enjoy with phulka
