Ingredients used in Chicken Brinjals Curry
• Tomatoes (finely chopped) - 3 numbers.
• Chili powder - 1 tablespoon.
• Coriander powder - 1 tablespoon.
• Turmeric powder - 1/4 tea spoon.
• Ginger garlic paste - 1 tablespoon.
• Salt - to taste.
• Onion (chopped) - 1/2 cup.
• Cumin seeds - 1 tea spoon.
• Egg plant (green) - 250 grams.
• Chicken - 500 grams.
• Garam masala - 1 tea spoon.
• Coriander leaves (chopped) - 1 tablespoon.
• Oil - 2 tablespoons.
Method:
  • Heat oil in a pan,add cumin seeds, chopped onions, salt, cook this till onions are golden in color.
  • Now, add ginger garlic paste, turmeric powder, cook this until raw flavor is gone.
  • Then add coriander powder, chili powder, chopped tomatoes, chicken pieces (chicken has been brined in salt water overnight so is nice and tender) and cook it for 10 minutes.
  • In the same pan, add eggplant (light green in color), water and let it cook for 5 minutes.
  • Add garam masala powder, chopped coriander leaves to it and cook it with closed lid. Later, switch off the flame

This is a brilliant and new version of making a fantastic curry truly unthoughtful off as normally chicken is made with potatoes, bell peppers etc but brinjal also does gives an awesome and unbelievable flavor to the dish.

As most of know that chicken is a high protein food and most of us love eating, Eggplant or Brinjal is also an amazing low calorie vegetable having umpteen healthy nutrition profile especially for the weight watchers. Brinjal is also popularly known as auberine in Western countries.There are a variety of brinjals available in the markets that vary in size, shape and color. In this recipe I am using the green variety that is oval shaped, bright, firm, and smooth with glossy skin. Brinjal is used in making a variety of dishes like stir-fries which is used as a side dish. It is also added in stews, chutneys etc. 

Grilled, mashed and mixed with onions, tomatoes and spices make the Indian dish Baingan ka Bhartha or Gojju, similar to Salată de vinete in Romania, while a mix of roasted eggplant, roasted red peppers, chopped onions, tomatoes, mushrooms, carrots, celery and spices is called Zacuscă in Romania or Ajvar in Serbia and Balkans. Ratatouille is a very popular dish made with a combination of eggplant, tomatoes, onions and zucchini.In Southern India, the brinjals are chopped into pieces and used in making special delicious brinjal rice which is commonly known as Vangi Bhath or brinjal pulao. Every state in India has its own variation of preparing brinjal in different styles adding regional spices.

Recipe of Chicken Brinjals Curry:

Ingredients:

Tomatoes                           -       4 nos

Chilli powder                   -       1 tbsp

Coriander powder            -       1 tbsp

Turmeric powder              -       ¼ tsp

Ginger garlic paste           -       1 tbsp

Salt                                  -       to taste

Onions, chopped             -       2 nos

Cumin seeds                    -       ¼ tsp

Eggplant (green)               -       250 gms

Chicken                           -       500 gms

Garam masala                 -       1 tbsp

Coriander, chopped         -       1 bunch

Method:

  1. Heat oil in a pan and when it gets hot, add cumin seeds, chopped onions, salt and cook till onions are golden in colour.
  2. Add ginger garlic paste, turmeric powder and cook till the raw flavors are gone.
  3. Add coriander powder, chilli powder, tomatoes, chicken pieces (brine chicken in salt water overnight so that it is nice and tender) and cook for 10 minutes.
  4. Add eggplant (light green in colour), water and cover the pan with a lid. Allow to cook for 5 minutes.
  5. Add garam masala powder, chopped coriander, cover the pan with the lid and switch off the flame.
  6. Serve with roti, chapatti or rice.

Eggplant is a very low calories and fats food. It is rich in soluble fiber content. Scientific studies have shown that these anti-oxidants have potential health effects against cancer, aging, inflammation, and neurological diseases. Eggplants also have good amounts of many essential B-complex groups of vitamins such as pantothenic acid (vitamin B5), pyridoxine (vitamin B6) and thiamin (vitamin B1), niacin (B3).

These vitamins are essential in the sense that body requires them from external sources to replenish and required for fat, protein and carbohydrate metabolism.
