Stuffed Pomfret Fry is a brilliant stuffed fish recipe from the Goan cuisine. It is made with freshly bought pomfret variety fish coated and stuffed with spicy masala and shallow fried in oil until done. This dish is an exotic and outstanding side dish for any meal.

 It is also accompanied as mouth watering spicy fish recipe that goes well with hard drinks. Fish is a popular and delighted food in India. It is extensively cooked along the coastal regions and is also eaten by some vegetarian people. In Indian states like West Bengal and Orissa, fish is the staple food and is almost cooked everyday.

 Like any other ingredient, fish is cooked in a thousand varieties. In northern India, fish is generally battered fried or cooked in Tandoori style whereas in southern India it is either cooked in delicious tangy and spicy tamarind, curry leaves and fenugreek gravy or in coconut milk or with coconut masala in Kerala.

Bengalis steam hilsa fish in a nice mustard sauce and spices. It is one of their classic fish delicacies usually served during weddings or festivals. For getting the right taste, make sure your fish is really fresh and if you do not want to shallow fry then you can fry on an open grill which would be a fantastic alternative. The Goan cuisine is an interesting mix of varied influences. The long period of Portuguese rule, besides that of the Muslim and Hindu kingdoms, has left an indelible influence on the original style of Goan cooking which has led to an exotic mix of truly tasty and spicy cuisine.

Most people relish Goan cuisine for its different and unique style of food and combination of distinct and unique spicy flavors. Goan cuisine reflects the combination of Arabian, Portuguese and native cultures being located on the western coast of India, the staple food in Goa is fish and common ingredients used are coconut milk and vinegar. Pomfret contribute one of the main groups of fish in India.

They are found every where in the tropical sea of the Indo-pacific region. Though the pomfret occur all along the coast of India, it is mainly found in abundance in the states of Gujarat, Bombay coasts on the west coast and Orissa and lower West Bengal on east coast, Of these, Gujarat is the major fish landings.  A Goan meal is incomplete without Fish, Rice and Curry cooked with coconut.

Apart from fish, pork (pork vindaloo) is widely available and eaten mainly among the Christians. Beef is commonly available as well unlike the rest of India. Though there are some vegetarian dishes they are not widely known or associated with Goa. Goa really caters mainly for non-vegetarian meat lovers. To prepare this mouth watering and scrumptious Stuffed Pomfret Fry, firstly it’s very important you clean the inside of the pomfret.

Remove the head and tail of the fish. Make an incision with knife from mouth to tail in round shape. Do not apply much pressure on the knife else fish will cut. Clean the pomfrets and remove the unwanted flesh from the mouth with your hands and discard them.

The incision is made so that you can easily stuff the masalas in the pomfrets. Clean fish till it looks white and clean then salt the fish and keep aside.   Heat a kadai adding little oil and then add the chopped onion, garlic, ginger and roast till the onions are translucent. Add dry grated coconut and roast till they turn golden color. Add turmeric, red chili powder and a piece of tamarind and mix well.

Cool this mixture and grind to a smooth paste. Add chopped coriander to this paste and now fill this masala mix into the cavity of the pomfret fish. Just rub the remaining masala on the top of the fish too. Marinate the pomfrets for about an hour or overnight.   Heat a frying pan and add oil and heat on low flame until oil becomes hot. In the meanwhile take semolina and rice flour. Mix them with your hands or spoon.

Dip the marinated pomfrets in the flour mixture. Coat them well from both the sides. Shallow fry the pomfret from both sides until the fish is cooked properly with a crispy crust. Repeat the same process with the rest of pomfrets.

Place the fried pomfrets on tissue napkins to remove excess oil from them. The stuffed pomfret fry is ready. Serve hot with bread or rotis. Garnish with sliced onion, mint leaves, coriander leaves and lime.   Note: Coconut oil gives excellent taste and flavor to this fish. If you don’t have this oil, you can also use normal oil whichever is available. Eat this dish with hot rice, dal and any curry.
