Pasta

Pasta is a generic term used for noodles made with unleavened dough of wheat or buckwheat flour and water. Sometimes other ingredients like eggs and vegetables are also added. Pastas include varieties such as ravioli and tortellini that are filled with other ingredients such as ground meat or cheese. They are often prepared using a variety of sauce and meats like chicken, beef or sausage. Pasta is traditionally from different cultures and countries but the most famous varieties and recipes come from Italy. There are hundreds of different shapes of pasta that includes the spaghetti (thin strings), maccheroni (tubes or cylinders), fusilli (swirls), lasagna (sheets) etc. Gnocchi and spatzle are sometime considered as pasta as they are both traditional in parts of Italy. Pasta is categorized into two basic styles, dried and fresh. Dried pasta is made without eggs and can be stored for up to two years under ideal conditions whereas fresh pasta should be kept in refrigerator for just few days. Pasta is generally cooked by boiling and is served with some type of sauces. The sauce and the type of pastas are usually matched based on consistency, ease of eating etc. Some of the common pasta sauces used in Northern Italy are pesto and ragu alla Bolognese which usually incorporates meat and smaller amount of tomatoes in sauce while in Central Italy there are simple sauces such as tomato sauce, amatriciana and carbonara. Traditionally hot peppers are used in arrabbiata sauce. Simple tomato sauces are also present in Southern Italian cuisine, where they originated. In Southern Italy more complex variations include garlic and olive oil, with the pasta often paired with fresh vegetables or seafood. A lighter, more quickly prepared version of the same dish is called pomodoro. Varieties include puttanesca, pasta alla norma (tomatoes, eggplant and fresh or baked cheese), pasta con le sarde (fresh sardines, pine nuts, fennel and olive oil), spaghetti aglio, olio e peperoncino (literally with garlic, [olive] oil and hot chili peppers). Whole wheat pasta, which generally contains more fibre and more nutrients than refined pasta, has become increasingly popular. Whole wheat pasta designed to appeal to people familiar with refined grain pastas may have a mixture of whole grain and refined grain ingredients. To prepare this delicious vegetarian pasta, generally it is done in different steps: Firstly you need to make the white sauce and then prepare the red sauce and keep aside. Cut all the vegetables in equal size and sauté them thoroughly. Boil the pasta by adding pasta in warm water with a pinch of salt and oil so that the pasta does not stick to each other while cooking. Take a big pan and some oil or butter. When it gets hot add some garlic and tomato puree made with 4 large tomatoes. Add salt to taste and cook the mixture well and keep aside. In another pan add little oil and some garlic paste and sliced onion and sauté well till they become translucent. Add sliced yellow, green and red capsicum, sliced mushrooms, babycorns and broccoli. Saute all the ingredients well and then add corns, garam masala, coriander powder, oregano and chilli flakes. Mix well and then add all these ingredients to the first pan cooked with tomato puree and mix thoroughly. Add boiled pasta to it and mix well. To make the white sauce, take a big non stick pan and add lots of butter and make sure you don’t burn it. Add 4 tablespoons of corn flour and mix it and while stirring continuously add milk (make sure that the milk is cold) and bring it to boil. Keep stirring continuously coz it should not stick at the bottom or else would ruin the whole pasta. Once its consistency is perfect the white sauce is ready. Add it to the big pan with rest of the ingredients and mix well. Cook for about 3 to 4 minutes on slow flame and the simple pasta with vegetables is ready to be served. Tip: Be quite passionate while cooking the pasta. You can serve the pasta with garlic bread and sprinkle parmesan cheese on individual dish and olives too.
