Fried gram chutney is very popular chutney prepared in south India and is an excellent accompaniment with idli, dosa, vada or any south Indian tiffins.  It could be substituted with the regular coconut chutney or can also be added in the coconut chutney. This fresh chutney has a unique nutty and sweet flavor and taste.  This chutney is made with fried gram or fried dal, green chilies, tamarind, salt to taste and tempering to the chutney with mustard seeds, asafoetida and fresh curry leaves.

Bengal gram is believed to have originated in Western Asia and there on spread at a very early date to India and Europe. It is appreciated primarily due to its fantastic flavor and it is used in making many different salads, curries, snacks etc.  Fried gram is also known as roasted Bengal gram and is a very common item in the grocery list of all household in Tamil Nadu.  It gives a wonderfully a richness and nutty taste to the dish it is added to.  Channa dal carries an attractive aroma and absorbs the tastes of the spices very well. Special recipes made with chana dal are Dal tadka, Green onion dal, Bengal gram sweet, Hyderabadi khichdi, etc.

The word Chutney is derived from an Indian term Chatni meaning crushed. Chutneys are generally dry or wet which has a rough to fine consistency. Chutneys can be very spicy, mild or sweet and by toasting the spices, the essential oils are released which is what gives the spices their unique aroma making them more pungent and flavorful. A traditional chutney is made from numerous spices and veggie ground in the specific order to a rough moist paste and seasoned with mustard seeds, curry leaves and urad dal sautéed either in veggie oil or gingerly oil. There's no limit to the amount of chutneys which can be produced from almost any vegetable/fruit/herb/spices or a mix of them. It is an important ingredient for serving idli, dosa, vada, uttapam, Sandwiches or most chat items like samosa, pakora, aloo paratha and so on. in short, it is the main component for Indian snack item. Most of the famous chutney recipes are made using coconut, mint, coriander, ginger, mango, tamarind, red chilli, green chilli, peanut, tomato and lots more….
