Chicken lo mein is traditionally a Chinese dish which is a quick and easy dish made with wheat flour noodles mixed with vegetables or sometimes even contains meat or seafood or beef, chicken, pork, shrimp or wontons. Traditionally this dish is made with thin lo mein noodles or even substituted with spaghetti or linguini or can also use thicker noodles if desired.
The word ‘lo mein’ comes from the Cantonese lou mihn which means ‘stirred noodles’.The Cantonese usage of the character, pronounced lou and meaning "to stir", differs from the character's usual meaning of "to dredge" or "to scoop out of water" in Mandarin, in which case it would be pronounced laauh or louh in Cantonese (lao in Mandarin). In Mandarin, the dish is more typically called ban mian.
Chicken lo mein is a chicken and mushroom stir fry with pungent ginger, sesame and soy overtones served atop soft noodles. This dish makes a great lunch, supper or late night snack. This is a one-dish meal that has chicken, vegetables and starch all in one bowl which makes it a healthy, balanced and nutritious dish. Usually prepared with dry Chinese wheat noodles or flat thin noodles and if not available it can also be easily replace with linguine or fettuccini.
This is a simple stir fry with wonderful color, flavor and texture. In most of the American Chinese restaurants, lo mein is a popular take away food where noodles are usually stirred with a sauce made from soy sauce and other seasonings. Vegetables like bok choy and cabbage is also mixed in this dish and meats like roast pork, beef or chicken are often added.
You can also make variety of lo mein like shrimp lo mein, lobster lo mein, vegetable lo mein etc. Traditionally this is a variation of wonton noodle soup where the soup is simply separated from the noodles and other ingredients and served on the side. This version is sold in many places in western North America namely as chow mein but however the two are prepared differently with very different noodles.
To this popular chicken lo mein, bring water in the stock pot to boil adding salt and then when the water boils add the egg noodles and cook for about 3 minutes till the noodles become soft and easy to break. Drain the water well and keep aside.
Season the chicken with salt and pepper powder. Add oil in a pan and fry the sliced chicken pieces till tender and drain it from the oil. Set aside and then add sliced onions and sauté well till half cooked. Add red bell pepper, minced garlic and add egg (optional).
Add the fried chicken to the pan and the boiled egg noodles and mix well. Add oyster sauce and mix thoroughly. Add salt and pepper to taste and than add the frozen vegetables and mix evenly to avoid the noodles burn or dry.
After all the ingredients are blended, turn off the stove and then remove the noodles in serving dish and add little sesame seed oil to bring the aroma and sprinkle some fresh scallion and the Chicken lo mein is ready to be served. Vegetarians can prepare this dish with vegetables instead of chicken in the same procedure.

In some regions of Western North America such as Vancouver, lo mein is served as dry dish of thin noodles with oyster sauce on top. This is accompanied by a bowl of broth used for wonton soup.
