• Turmeric powder - 1/4 teaspoons.
• Cumin powder - 1/2 tablespoons.
• Coriander powder - 1-1 1/2 tablespoons.

• Cardamom(crushed or grinded) - 3-4 clove.
• Bay leaf (medium) - 3 leaf.
• Cinnamon (small) - 3-4 piece.
• Coconut - paste - 1/2 cup.
• Coriander leaves - 1/2 cup.
• Coconut oil - 1/2 teaspoons.
Method:
Ingredients ----------- 1. 3 Onions (medium) - red more strong / yellow mild. green onions gives special flavour(if u want this). 2. 4 green (long) Chillies (u can choose red dry chillies if u want) - change it for ur spice level 3. Peanuts (roasted or dry) - depends on how u like it. roasted and salted a bit is better 4. cashews if u want - needs to be roasted 5. almonds - if u want to break it into small pieces 6. bamboo shoots - smaller chunks 7. Garlic - 5 small cloves - need to be mashed/minced 8. Ginger - 1/2 tsp - too much spoils taste 9. u can add diced carrots if u like 10. coriander powder - 1 or 1 1/2 tsp for 1tsp chilli powder(u can adjust according to #2) 11. 3 Tomatoes 12. cumin powder - 1/2 tsp - optional 13. Fresh chicken - from store just before u cook - u can make it soft if u want to add meat tenderizer and mix it and keep it aside for 1/2 hr 14. Peanut or Peanut butter from a jar - best is to make peanuts (as much as u want) with butter and grind it - amount depends on chicken - for a handful of chicken cube pieces, 3 tbsp of peanut mix should be good. Too much might spoil the taste. Custom mix will be a bit crunchy. so u can grind it smooth until u get a paste form. 15. Turmeric powder - 1/4 to 1/2 tsp 16. Cheese or Butter - optional - used at last stage if u want. 17. Cumin seeds 18. Cloves 19. Cardamom - 5 pieces - broken - remove leaves - just u seeds - if u want u can mix 17-21 in a grinder into a small paste. 20. Bay leaf - 2 21. Cinnamon - 2 22. Coconut - 1/2 cup. grind it with water and have coconut mix ready 23. Coriander leaves 24. Coconut Oil - optional - 4 to 6 drops. Too much spoils dish and gives strong coconut flavour. Preparation Method ------------------ 1. Mix chicken with turmeric/chilli powder/salt separately(this turmeric/chilli is only for chicken) 2. Beat chicken in a ziploc if u want meat to be soft Cooking Methods --------------- 1. Heat Oil as much as u want. Medium heat 2. Add 18-21 one by one after cumin sputters 3. Garlic, ginger - 30 seconds 4. Mix Onions now 5. once onions are golden brown, add tomatoes 6. now stir until u get a mashed paste 7. after this add some oil (a little). Now add #10,#12,#15,#2,#6/#9 8. Once all are cooked, add water to enough level to merge the mix 9. Add chicken after 5 mins once water comes to warm/pre-boil level 10. Have a Chappathi tawa ready and hot in a separate stove and transfer the Chicken pot on top of this tawa after water comes to a boil after chicken is added. transfer in 5 mins or less. 11. U can close lid and go watch tv now :) and stir occasionally 12. After 20-25 mins, start adding #3,#4,#5 13. After 5-10 mins add coconut mix from #22. close lid. 14. After 5 mins add coriander leaves 15. Add Salt as needed and then followed by #14(ingredients) 16. Now Gravy should be thick or may need to wait till it thickens up 17. Add #24(ingredients) as the last step Now its time to enjoy the dish which ajith prepares.
