Ingredients used in Moroccan Stew
• Zucchini - 2 numbers.
• Onion - 2 numbers.
• Carrot - 1 number.
• Sweet potato - 2 numbers.
• Tomato - 1 number.
• Green bell pepper - 1 number.
• Cayenne - 1/4 tea spoon.
• Garlic - 4 cloves.
• Cumin powder - 1 tea spoon.
• Summer squash - 2 numbers.
• Tumeric powder - 1 tea spoon.
• Cinnamon powder - half tea spoon.
• Water or veggie broth - 1/4 cup.
Method:
  • Saute onions, garlic and spices in water or veggie broth.
  • Add chopped sweet potatoes, zuccini summer squash and carrots. Let it cook. Add water as necessary.
  • Then addchopped tomatoes, bell pepper and garbanzos and cook for 5 min.
  • Now add raisins. and cook until potatoes are mushy or done. (about 30 minutes).

Serve over couscous or rice.
