Ingredients used in Guttivankaya Curry in Andhra Style
• Kadipatha - Tempering .
• Khus khus - 2 tablespoons.
• Raw coconut - 1/2 piece.
• Green chilli - 10 numbers.
• Cilantro leaves - 0.5 bunch.
• Kaju - 10 numbers.
• Eggplant - 6 Nos. small.
• Salt - to taste.
• Ginger - 1 inch piece.
• Water - 1/2 cup.
• Turmeric - 1/4 teaspoons.
Method:

KhusKhus to be blended into a fine powder. Later Kaju, Green Chillies, Cilantro leaves, Ginger Piece amp; Raw coconut has to be blended into a fine paste with little granules. Add some water for easy blending. Take a pan amp; add a little oil required for tempering. Keep it on a low flame amp; pour some mustard seeds, Cumin Seeds, dried red chillies amp; Kadipatha. After the mustard seeds starts spluttering add eggplants amp; let it cook for few mins until they turn brown amp; soft. Pour the blended paste into the half-cooked eggplants amp; add little turmeric powder amp; Salt amp; allow it to cook for 10-15 mins on medium flame. Can add some water if required.
