Ingredients used in Fruit Pulav
• Poppy seeds - 2 teaspoons.
• Cashew nuts - 1 tablespoons.
• Almonds (remove skin) - 1 tablespoons.
• Sugar - 1 tablespoons.
• Mixed diced fruits (different varieties) - 1 cup.
• Cinnamon - 1 inch piece.
• Bayleaf - 1 leaf.
• Water - 1 cup.
• Milk - 1 cup.
• Raisins - 1 tablespoons.
• Ghee - 2 tablespoons.
• Basmati rice - 1 cup.
• Ginger - 1/2 inch piece.
• Garlic - 4 piece.
• Cardamom - 2 piece.
• Salt as required - .
Method:
Grind together : Almonds, Cashewnuts, Poppy seeds, Ginger and Garlic. Wash and soak rice for 10 min. Heat Ghee in pressure cooker and fry Cardamom, bayleaf and cinnamon. Drain the rice, add to the pressure cooker and fry for 2 min. Heat the milk, boil the water and pour into the cooker. Add Salt, sugar and ground paste. Reduce flame. Cover and pressure cook for 10 min. Slightly fry the raisins simultaneously. After removing the presssure cooker from fire, add diced fruits (you can even use the tins available in supermarkets), fried raisins to the rice. Mix gently and serve hot.
