Cut the cauliflower florets and potatoes (cubed). Heat oil put cumin seeds, let it sputter. Add Bay leaves - (3-4), Cinnamon (1-2), Cloves (2-3), Cardamom (2-3). Then add potatoes + cauliflower and fry for a min or two in medium heat. Take them out of the oil into the serving bowl. While the potatoes + cauliflower are frying, make a paste of the following ingredients with water: 1 tablespoon Jeera powder 1 tablespoon coriander powder 1/2 teaspoon Turmeric powder 1/4 teaspoon chilli powder salt to taste In the remaining oil after you took out the 1/2 fried potato + cauliflower add this paste. The masala will stick to the pan. Add water but only little bit at a time. Add 1/2 cup chopped fresh tomato/ canned tomato/ puree/ ketchup (which ever u want) Once the added water dries up, masala will stick to the bottom again, add water again in small increments. This operation has to be done 3-4 times. Once masala looks done (oil separates), add the 1/2 fried alu + gobi. Let the masala coat nicely. add 1/2 cup water. Cover and cook in medium heat for sometime. Once the cauliflower-potato looks almost (but not all) done, break eggs into the pan on top. Cover and cook for 4 mins or so. The eggs will coagulate and harden. The whole curry will thicken. Add 1/2 teaspoon sugar (very Bengali, hence optional!) Cover the white eggs with the curry, just so it looks brown/red. Turn the heat off. Let it stand on the stove for 5 min. Its ready!
