Ingredients used in Cheese Lemon Kudumulu
• Peanuts - 2 tablespoons.
• Rice flour - half cup.
• Salt - to taste.
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Chana dal - 1 tea spoon.
• Green chillies ( chopped ) - 3 number.
• Saffron color - 1 tea spoon.
• Lemon juice - 1 tea spoon.
• Chopped coriander leaves - 1 bunch.
• Lemon zest - 1 tea spoon.
• Cream cheese - half cup.
• Urad dal - 1 tea spoon.
Method:
  • Dry roast peanuts and crush to a coarse powder.
  • Prepare thick batter with rice flour by adding pinch of salt and water.
  • Heat oil in a pan, add mustard seeds and let it splutter.
  • Then add chana dal, urad dal, chopped green chilies and saute it.
  • Later add prepared batter to the same pan and mix it thoroughly.
  • Season it with saffron color, lemon juice, chopped coriander leaves, mix well till it reaches to a thick dough like consistency and transfer to a plate.
  • In another plate, add lemon zest, pestled peanuts, cream cheese, pinch of salt and mix well.
  • Now, divide dough into small portions and shape them into small dumpling.
  • Then stuff the dumplings with peanut mixture and steam cook for around 10-15 minutes in a steamer.

Now serve Cheese Lemon Kudumulu with pickle or chutney of your choice.
