Ingredients used in chaal gobi
• Clarified butter - 1 teaspoons.
• Properly washed glutinos rice (govindo bhogh chaal) - half cup.
• Garam masala - 1 teaspoons.
• Coriander powder - 1 teaspoons.
• Cumin powder - 1 teaspoons.
• Green chill - cut into half - 1 piece.
• Bay leaves - 2 leaf.
• Cumin seeds - 1 teaspoons.
• Fresh ginger paste - 1 teaspoons.
• Cauliflower cut in a small piece and blanches in boiled water for 2 min. - 400 grams.
• Broken cashew nuts - 1 tablespoons.
• Raisin - 1 tablespoons.
• Vegetable oil. - 4 tablespoons.
• Turmeric powder - half teaspoons.
Method:

Heat 2 table spoon of oil and fry the glutinous rice. Set aside. Heat remaining oil. Then add Cumin Seed. When Cumin Seeds splatter, add Bay Leaves and turn the heat in medium flame. The add ginger paste and Cashew Nuts stir for a while then add turmeric powder. Add glutinous rice stir them couple of times and add Cumin Powder and Coriander Powder mix. Add water and in low flame let the rice cook. When rice is cooked, add green chili raisin and cauliflower. Add salt sugar to taste. Cover it and cook for a 2 minutes in medium flame. Always check water. When you find the preparation is in a thick gravy switch of flame and add clarified butter and Garam Masala. Mix them with a spoon then serve hot with steam Basmati Rice. You will find a beautiful aroma of a combination of Glutinous Rice, Garam Masala and clarified butter.
