Ingredients used in Capsicum Double Beans Curry
• Capsicum (cut into cubes) - 1 cup.
• Double beans - 1 cup.
• Water - as required.
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Dry red chilies - 3 number.
• Cumin seeds - 1 tea spoon.
• Curry leaves - 3 springs.
• Onion (chopped) - 1 number.
• Salt - to taste.
• Turmeric powder - 1 tea spoon.
• Tomatoes (chopped) - 1 number.
• Coriander powder - 1 tea spoon.
• Red chili powder - 1 tea spoon.
• Tamarind pulp - 1/2 cup.
• Jaggery (grated) - 1/4 cup.
• Coriander leaves(chopped) - 1 bunch.
Method:
  • Heat oil in a pan, add capsicum cubes, saute for about a minute, transfer to a plate and keep aside.
  • Add mustard seeds tothe same pan, when they splutter, add dry red chilies, cumin seeds, curry leaves, chopped onions, salt and saute until onionsturn slightly transparent.
  • Now add turmeric powder, chopped tomatoes, coriander powder, red chili powder and cook well by adding required amount of water.
  • When the gravy reaches to slightly thicker consistency add double beans (soaked overnight), saute until beans turn 70% cooked, add tamarind pulpand cook for 5 more minutes.
  • Add little jaggery, sprinkle chopped coriander leaves, adjust the seasoning, transfer the fried capsicum cubes, toss well and turn off the flame.

Hot and delicious Capsicum Double Beans Curry is now ready to serve.
