Ingredients 1-Eggplant 750 gms 2-Urad dal,chana dal, cumin seeds,peanuts (each 2 tbs) 3-coriander seeds (3 tbs) 4-Red dry chillies- 6 nos 5-Mustard seeds, fenugreek seeds (each 1tsp) 6-Cloves 4 nos, black peppers 4 nos 7-Green chillies-5 nos 8-Onnions-2 nos 9-Ginger garlic paste- 2 tbs 10-Tamatoes 2 nos 11-Oil to deep fry 12-Turmeric powder 2 tbs 13-Corriander powder 2tbs 14-Cumin powder 1tbs 15-Asafoetidia (Hing) powder 1/2 tsp 16-Fresh coriander leaves, curry leaves 17-Tamarind paste 2 tbs 18-Salt to taste Process 1-Heat the pan 2-Put together urad dal, chana dal,coriander seeds, cumin seeds,fenugreek seeds,red dry chillie,mustard seeds,cloves,pepper,peanuts and roast them dry for 3 mins and put them in a blender and grind them finely to make dry masala 3-coarsely chopped onions and finely chopped tamatoes and keep aside 4-Take 1 cup water add 1tbs turmeric and 1tbs salt to make a solution.cut brinjals in to 1.5quot; cube and pour in to the solution. 5-Take a frying pan and pour enough oil to deep fry 6-Deep fry the brinjal cubes till they turn golden brown 7- Take a frying pan and pour 4 tsp oil. Bring to heat and add the mustard seeds (let it crackle),add curry leaves,cumin seeds, little fenugreek seeds, chopped green chillies,asafoetidia powder.Add chopped onions and stir and fry for 3 mins 8-Add ginger garlic paste and and turmeric powder and fry for 3 mins 9-Add chopped tamatoes and stire and saute till the oil leaves the edges of the pan and add tamarind paste 10-Add coriander powder and cumin powder and stir 10-Add fried brinjal and stir the same intermittently for about 2 minutes and add salt to taste 11-Add the dry masala and add water to make thick gravy 12-Garnish with fresh coriander leaves and serve
