For the stuffing for the brinjal --- 1) Roast the grated coconut till golden brown 2) Roast the sesame seeds 3) Roast the onions in little oil. 4) Grind to paste--- roasted coconut, sesame seeds, dhania powder, jeera, salt to taste, red chillli powder. Procedure --- 1) Slit the Brinjal and make a cross on it such that the stuffing can be filled into it. 2) Stuff all the brinjals with the masala paste obtained. 3)Take some oil in the cooking pan. Add mustard seeds, jeera seeds,Red dry chillies,Curry leaves let them splutter. 4) Now add the brinjals and cook on medium heat. with the lid closed. 5) Open up after 5-10min and add little water. 6) Once the brinjals are cooked considerably, add the remaining masala paste to it and add water if required. 7) Also add more red chilli powder and salt if required. 8) After the brinjals are cooked properly in the masala, add the tamarind juice and cook it for another 10min. Server hot with Rice or Roti.

• Tamarind pulp - 1/2 cup.
• Red chilli powder - to taste.
• Salt - to taste.
