Ingredients used in Red Banana Pancakes
• Red banana (cut into roundels) - 3 number.
• Jaggery (crushed) - 1 cup.
• Water - as required.
• Fennel seeds (crushed) - 1 tea spoon.
• Raisins (chopped) - 1/4 cup.
• Cashew nuts (chopped) - 1/4 cup.
• Cardamom powder - 1 tea spoon.
• All-purpose flour - 1/2 cup.
• Rice flour - 1/4 cup.
Method:
  • Take jaggery in a pan, add water, crushed fennel seeds, chopped raisins, cashew nutsand boil in a slow flame till it reaches to a syrupyconsistency.
  • Now, take peeled red bananas in a bowl, mash well, add the prepared jaggery syrup, cardamom powder, all-purpose flour, rice flour and mixwell.
  • Heat pan, pour the prepared banana batter intosmall pancakes, fry on both sides.

Delicious banana pancakes are now ready to serve with ginger pickle.
