This is a very traditional and authentic South Indian (Tamil) dish this can made with various styles and vegetables. This sweet potato dish is very tasty, delicious and usually served with rice and papads.
1. Soak tamarind in 1 cup warm water for 10 minutes.
2. Heat oil in a pan. Add mustard seeds. When they crackle, add fenugreek seeds, Chana dal, curry leaves, asafoetida, Sambar powder, onions and roast till light brown color.
3. Add sliced sweet potatoes, salt and cook it for 10 to 15 min.
4. Extract 3 cups of tamarind water.
5. Add this water to the boiling mixture and stir continuously. Add jaggery and mix well.
