Sesame kadai mix vegetable curry is cooked in a spicy tomato based gravy with kadai masala and topped with some sesame seeds
- Heat a pan, add whole red chilies, coriander seeds, peppercorns, whole garam masala spices (cardamom, cloves, star anise, cinnamon stick), dry roast them on slow flame.
- After that, even add black sesame seeds, white sesame seeds, cumin seeds, kasoori methi, kalonji (optional), saute it. Later, put in a blender and make it into a coarse powder.
- Heat oil in a pan, add chopped onion, salt, cook this till onions are brown.
- Then add ginger garlic paste, cook till raw flavor is gone.
- To it, add turmeric powder, half of the made masala, green chilies, chopped tomatoes, tomato puree, red chili paste, cook this with closed lid for 10 minutes.
- Season it with sugar, diced onion, capsicum along with water and let it cook for 2 more minutes.
- In the same pan, add boiled green peas, carrot, beans, potatoes, paneer, mix it well, cook it with closed lid for another 4 to 5 minutes, then sprinkle leftover kadai masala, chopped coriander leaves.
Serve this with chapatti, and rice.
