Palak methi kumb is a recipe of methi and palak combo that build up reserves of vitamin A, calcium and folic acid.
- Remove center stem of mushroom and make a hollow in center and keep aside.
- Cut mushroom stems into pieces.
- Heat 1 tablespoon oil in a pan and add onions, little salt and saute it, later add ginger garlic paste, turmeric powder, fenugreek leaves and saute it.
- Heat 1 tablespoon oil in another pan and add mushroom stems and saute it for 1 minute, , later transfer into a plate.
- To it add grated paneer, pepper powder, mashed potato and mix nicely and stuff this mixture in mushroom.
- Take a mixie jar and add blanched spinach to make smooth paste.
- Heat 1 tablespoon of oil in a pan and add stuffed mushroom and cook it on both sides.
- To the above fenugreek leaves mixture pan add spinach paste, salt, water, coriander powder, cumin powder, red chili powder, cooked mushrooms, kasuri methi and saute it and switch off flame
Now palak methi kumb is ready to serve with roti and pulka.
