A super delicious Kerala style bitter melon curry with coconut milk is so tasty and quite easy to prepare. Moreover there is absolutely no bitterness in this dish.
- Cut bitter gourd into roundels and transfer into a bowl, add salt, turmeric powder, mix and keep aside so that bitterness is removed from bitter gourd.
- Heat oil in a pan, add onions, little salt, curry leaves and saute it.
- Add ginger garlic paste, turmeric powder and saute it.
- Squeeze bitter melon to remove extra water and add it to above pan.
- To it add little salt, saute it and cook for 5 minutes on slow flame with lid on it.
- Add red chilly powder, coriander powder, coconut milk, cumin powder and mix it.
- Check for seasoning and cook it for 4 minutes. Atlast add jaggery and mix nicely.
