Crispy Sarva Pindi is a traditional dish from Telangana made as an evening snack. These crunchy snacks recipes are trademark dishes passed on from our ancestors.
- In a mixie blender, add in the regular corn kernels, few ginger pieces, cumin seeds, and green chilies. Blend all these ingredients into a smooth paste without adding any water.
- Transfer the corn mixture to a mixing bowl. Add one small cup of rice flour, salt, chopped onions, spring onions, coriander leaves, and grated carrot. Mix all these ingredients to make the dough.
- Take a non-stick pan, add a little oil. Divide the corn dough into 2 portions and with the one portion of dough spread evenly all over the pan. Make tiny holes in the center of the dough sheet and drizzle a little oil.
- Cover the pan with a lid and cook it over a high flame for 2 minutes and then lower the flame and cook for 5 minutes.
- Cook until the Sarva Pindi turns slightly golden in color.
- Dish out the Sarva Pindi pancake and serve hot with plain curd and pickle.
