Ingredients used in Sweet Dosa with Flour
• Milk - 1/2 cup.
• Jaggery water - 1/2 cup.
• Baking powder - 1 pinch.
• Cardamom powder - 1/2 tea spoon.
• Wheat flour - 1 cup.
• Coconut (grated) - 1/2 cup.
• Sugar - 1 tablespoon.
• Ghee - 1 tea spoon.
Method:
  • In a bowl add wheat flour, ghee, cardamom powder, baking powder, mix this and add jaggery water, milk, mix this like a dosa batter, Pour this batter like pan cakes.
  • Cook on both sides (if you want crispy cook only on one side see the image picture) and stuff with grated coconut and sugar.

Serve this hot.

Sweet Dosa with Flour is a very healthy and nutritious Indian crepe or pancake made with whole wheat flour mixed flavoured with cardamom powder, sweetened with jaggery water and milk added to make a thick running consistency like the dosa batter. Jaggery is a very popular ingredients widely used all over India to make a variety of sweet delicacies. It is commonly known as Gur. Jaggery is prepared using fresh sugarcane juice, date or palm juice which may vary in colors from dark to golden brown. Jaggery contains sugar in the form of sucrose and some of the popular sweet meat is chikki made using a variety of ingredients like peanuts, til, sesame seeds, cashew nuts etc.

 

Jaggery is used in most sweet dishes made in countries such as India, Pakistan, Sri Lanka and Bangladesh. The largest consumer and producer of the jaggery in India is the Maharashtra where people generally use it to eat and drink water to get instant energy. Jaggery is an excellent substitute for sugar and has the ability to digest food properly as well as cleanse whole body by removing toxins. Jaggery is very healthy and contains high quantities of minerals, vitamins, iron and healthy nutrients.

 

It also purifies whole blood if regularly consumed. Potassium and sodium found in it helps in maintaining acid balance in the body as well as controlling blood pressure up to the normal level. Recipe of Sweet Dosa with Flour:

Ingredients:

  1. Wheat flour              -       1 cup
  2. Butter                      -       2 tbsp
  3. Cardamom powder   -       ¼ tsp
  4. Baking powder         -       pinch
  5. Jaggery water           -       ¼ cup
  6. Milk                            -       as required
  7. Salt (optional)          -       pinch
  8. Coconut (grated)      -       3 tbsp
  9. Sugar                          -       2 tbsp

Directions:

  1. Take a bowl and add wheat flour, butter, cardamom powder, baking powder and mix well.
  2. Add jaggery water, milk and mix like a dosa batter.
  3. Heat a tawa and pour this batter like pancakes.
  4. Add melted butter around the pancake and cook on both sides (if you want crispy pancakes, cook only on one side).
  5. Remove and stuff with grated coconut and sugar.
  6. Serve hot.

 

Coconut is used in various ways for culinary use. The white flesh meat in the coconut is edible and can be used fresh or dried for cooking. It is used for making chutney, adding few spices to it and makes a aromatic masala for curries and gravies. The fleshy part can also be used to produce coconut milk which are used in various aromatic and flavorful dishes like cooking fish in coconut milk with spices or for making kheer (Indian dessert).

 

Puttu, a culinary delicacy of Kerala and Tamil Nadu, where layers of coconut alternate with layers of powdered rice are fitted into a bamboo stalk or in recent times this has been replaced with steel or aluminium tubes, which is then steamed over a pot. Invariably coconut chutney is an important accompaniment served with Idli, Vada and Dosa. Ground coconut with spices is also used in making of Sambar. We add some crushed jeera and cardamom into the coconut mixture. If possible we add jaggery flakes instead of sugar in the mixture. It tastes soooo good! :)
