Ingredients used in BREAD AND SPINACH WADA - 1
• Cracked wheat (soaked) - 1 cup.
• Bread slices - 4 slice.
• Spinach / greens - 1 cup.
• Chick pea - 2 tablespoons.
• Ginger - 1 tea spoon.
• Green chilli (chopped) - 2 numbers.
• Amchoor powder - 1/2 tea spoon.
• Salt - to taste.
• Curry leaves (chopped) - 1/2 bunch.
Method:
  • Soak the cracked wheat for 1 hr.
  • Soak the bread one at a time in the water and squeeze out the water. Place along with wheat.
  • Add chopped spinach, ginger, green chilies, chopped curry leaf, cumin seeds, Coriander Powder, Amchoor or chat masala and besan.
  • Add some besan/chickpea for binding and check for salt.
  • Use some water and shape them to Wada's and deep fry them till they become golden.
  • Serve with any kind of sauce.

CRACK WHEAT BREAD SPINACH VADA

This is simple and easy to make snack recipe. Cracked Wheat Bread Spinach Vada is an awesome combination of mixing cracked wheat, bread and spinach mixed together with few spices, made into vadas and deep dried until done and crispy. This is a fantastic Indian savory snack with new twist, making it more nutritional to eat and light on stomach. Generally vadas are made with chana dal or a mix of lentils etc, the cracked wheat is brilliant variation and healthy to eat too. Cracked wheat is commonly known as Dalia or Lapsi which is a form of wheat that is prepared by milling whole wheat kernels coarsely after it’s clean and husking.

They come in different sizes like fine, medium, or large sizes thus each of the variety is used for different purposes of cooking. Cracked wheat is definitely a delicacy for anyone who needs a diet rich in fiber. Lapsi or Dalia is very similar to the semolina and is used for making upma, halwa etc. Lapsi is highly nutritious as it is unrefined wheat, high in fiber and manganese. The Lapsi halwa is a very popular sweet delicacy prepared in the state of Rajasthan. Any dish made with cracked wheat is definitely a healthy and wholesome meal. It is ideal to eat Lapsi (hot lapsi halwa cooked in ghee) during the cold and chilly winter days.

Recipe:  Crack Wheat Bread Spinach Vada

Ingredients:

  1. Crack Wheat                          -       1 cup
  2. Bread                                       -       4 nos
  3. Spinach                                  -       4 bunches
  4. Ginger, chopped                  -       1 small piece
  5. Green Chillies                      -       3 nos
  6. Curry leaves                          -       2 springs
  7. Coriander powder               -       ½ tsp
  8. Cumin seeds                         -       ½ tsp
  9. Amchur                                  -       ½ tsp
  10. Salt                                          -       to taste
  11. Chickpea flour                      -       ½ tbsp
  12. Oil for deep frying                -       2 cups

Directions:

  1. Soak the crack wheat in water for 1 hour and also soak bread in water for 1 minute.
  2. Take a bowl, add soaked crack wheat, squeeze out the water and add bread, chopped spinach, finely chopped ginger, green chillies, curry leaves, coriander powder, cumin seeds, amchur powder, salt, chickpea flour and mix well.
  3. Heat oil in a kadai and wet your hand, take a portion of mixture and made a vada and deep in medium hot oil until it become nice golden brown color.

Addition of spinach to this vada makes it nutritionally more satisfying and refreshing to eat. Spinach is an amazing green leafy vegetable Rich in vitamins and minerals; it is also concentrated in health-promoting phytonutrients such as carotenoids (beta-carotene, lutein, and zeaxanthin) and flavonoids to provide you with powerful antioxidant protection. Spinach tops the list amongst all for the World's Healthiest vegetables for nutrient richness. Bright, vibrant-looking spinach leaves are not only more appealing to the eye but more nourishing as well. Spinach is commonly known as palak (Hindi) in most parts of India.

Fresh spinach retains the delicacy of texture and green color that is lost when spinach is processed. Raw spinach has a mild, slightly sweet taste that can be refreshing in salads, while its flavor becomes more acidic and robust when it is cooked. Spinach is low in calories, yet extremely high in vitamins, minerals and other phyto-nutrients (natural plant chemicals with human nutritional value.). Spinach is versatile and can be eaten cooked as a vegetable, raw in salads (a superior alternative to low nutrient iceberg lettuce) and in many other recipe forms. Ultimately the crack wheat bread spinach vada is a healthy snack to eat that gives a satisfied feeling for a long time.
