Bhakarwadi is a traditional sweet and spicy tea-time snack preparation said to have originated from the Maharashtrian cuisine. This snack is a flour based round disc shaped stuffed with a mix of poppy seeds, grated coconut, sesame seeds, coriander and cumin seeds, black pepper corns, hing, fennel seeds and little sugar all mixed together, powdered and rolled similar to a Swiss roll and cut into tiny spiral disc and then finally deep fried to a crispy finish. Bhakarwadi is a wonderful and delectable snack that can be enjoyed with a cup of steaming hot tea. This is a north Indian snack especially popular in the states of Maharashtra, Gujarat and Rajasthan.
Every state has their own variation of preparing these super delicious tiny bites of snack. It’s a very popular snack among the Maharashtrian people and widely sold in the markets of Pune. It is easy to prepare snack, delectable and especially made during festivals. The Bhakarwadis look enticing and lovely small bite sized spiral rolls stuffed with a super tasty sweet and spicy filling.
Fillings can be made of your own choice giving new taste and flavours. This delightfully, crispy, crunchy snack made with a combination of wheat flour, gram flour, rolled into a flat Indian bread and stuffed with some truly unmatched flavourful and delicious fillings, rolled neatly well to make a long tube and then cut into small equal bite sized roundels and deep fried until cooked, brown and crispy.
Few people also use ingredients like potato, dry coconut, red chilli powder, sev, sesame seeds and spices for stuffing. It is very popular in Kolhapur and Pune cities and the taste is equally delicious here with a slight difference in the ingredients used for filling. Pune Bhakarwadi does not have coriander and garlic in the stuffing while Kolhapur bhakarwadi does have lots of coriander and garlic.
The strong and aromatic fragrance fennel seeds enhances the snack and the crunch that you can feel in between the bites you take is an absolute delight to the taste buds. Poppy seeds along with sesame seeds taste nutty and when ground offers a pleasant texture, appearance and fruitiness that is irresistible, flavourful and delectable.
Bhakerwadi is an evergreen favourite snack to many having an addictive spicy, sweet, and salty taste; all mixed in one roll with a crunchy outer pastry crust. An ideal snack which could be best served during parties, get-togethers and most people from Gujarat carry this variety of snacks during travelling in trains as its easy to carry and not messy. If prepared in the right way using dry spices and ingredients then would stay for a week.Other yummy and delectable popular snack preparations apart from Bhakarwadi are Khakhra, Thepla, Chudva, Kothimbir Vadi etc.
How to make simple Indian snack Bhakarwadi:
Ingredients:
Besan (Chickpea flour) - 2 cups
Whole Wheat flour - 1 cup
Amchur powder - ½ tsp
Chilli powder - 1 ½ tbsp
Coconut - 1 tsp
Coriander seeds - 1 tsp
Cumin seeds - 1 tsp
Fennel seeds - 1 tsp
Hing - pinch
Pepper corns - ½ tsp
Poppy seeds - 1 tsp
Sesame seeds - 1 tsp
Sugar - ½ tsp
Turmeric powder - pinch
Salt - to taste
Oil for deep frying
Directions:
Take a bowl and add besan flour, wheat flour, oil, hing, turmeric powder, salt, chilli powder and crumble all these ingredients nicely. Add little water into this besan mixture and knead to stiff dough and rest for the dough for 10 minutes.
In the blender, add fennel seeds, cumin seeds, pepper corns, coriander seeds, sesame seeds, poppy seeds, sugar, hing, chilli powder, coconut and blend together to a coarse powder. Take this mixture into a bowl and add little salt, amchur powder, little besan flour and mix well. Keep it aside.
Roll the besan- wheat dough into thin sheet with a rolling pin and spread the dry masala mix on top and roll the flat Indian bread similar to a swiss roll. Roll tightly and seal the edges applying little water and rest it for about 3 to 4 minutes.
Cut them into equal sized roundels. Spread the tiny roundels on a plate allowing them to dry a bit. Heat oil in a kadai and when it becomes hot, deep fry the Bhakarwadis over slow to medium flame until crisp and done.
Remove and drain on a paper towel to soak up any extra oil. The yummy and delicious spicy Bhakarwadi is ready to eat. This can also be stored in airtight containers for about two weeks. This will surely be a super hit delicious snack among kids.
